Tangy Chicken Wings




Ingredients
4 lbs of chicken wings, sectioned
3 cups of barbecue sauce (your favorite)
1 (20) oz can of crushed pineapples
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/2 tsp Emeril's Original Essence

Directions
Preheat oven to 450° degrees.

Begin by bringing a 6 quart pot, half-filled with water, to a boil. Add the chicken wings and cook for 15 - 20 minutes or until done (you will know when they're done by sticking a fork in them and the juice is clear).  Once the wings are done, transfer them to a lightly greased cookie sheet (to prevent sticking).  Sprinkle the wings with half of the black pepper, Italian seasoning, and Emeril's Original Essence and cook for 15 - 20 minutes or until the chicken is slightly crispy. 


While the chicken is cooking, mix together the barbecue sauce and crushed pineapples, and set aside.


Remove the wings from the oven and turn the wings over and sprinkle the other side with the remaining seasoning. Cook for 5 - 10 minutes more to make certain that the wings are crisp on that side. Remove the pan from the oven and coat the wings with the prepared sauce. Cook the chicken for 10 more minutes and serve with your favorite veggies! Enjoy! Makes 4 - 6 servings.
