Ingredients
- 3-4 cooked boneless skinless chicken breast
- (cubed or broken into small pieces)
- 20 grapes cut into small pieces
- 1/2 chopped cucumber
- 1 cup of low-fat mayonnaise
- 1/3 cup of crushed whole almonds
- 2 Tbsp of chopped onion
- 1/4 tsp of black pepper
- 1/4 tsp of Emeril's Original Essence
Directions
Combine all ingredients together and chill in the refrigerator for one hour. Enjoy! Makes 6 servings.
