Four Fruit Smoothie

I love these flavors blended together! This smoothie is so sweet, with no sugar added! It's a good way to get your fruit servings for the day! 
















2 medium bananas
2 kiwi fruit, peeled and sliced
1 mango, peeled and sliced
2 cups of frozen strawberries
1 cup of almond milk

Combine all ingredients in a blender and mix until well blended. Enjoy! Makes 6 (8 oz) servings.

Tangy Chicken Wings




Ingredients
4 lbs of chicken wings, sectioned
3 cups of barbecue sauce (your favorite)
1 (20) oz can of crushed pineapples
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/2 tsp Emeril's Original Essence

Directions
Preheat oven to 450° degrees.

Begin by bringing a 6 quart pot, half-filled with water, to a boil. Add the chicken wings and cook for 15 - 20 minutes or until done (you will know when they're done by sticking a fork in them and the juice is clear).  Once the wings are done, transfer them to a lightly greased cookie sheet (to prevent sticking).  Sprinkle the wings with half of the black pepper, Italian seasoning, and Emeril's Original Essence and cook for 15 - 20 minutes or until the chicken is slightly crispy. 


While the chicken is cooking, mix together the barbecue sauce and crushed pineapples, and set aside.


Remove the wings from the oven and turn the wings over and sprinkle the other side with the remaining seasoning. Cook for 5 - 10 minutes more to make certain that the wings are crisp on that side. Remove the pan from the oven and coat the wings with the prepared sauce. Cook the chicken for 10 more minutes and serve with your favorite veggies! Enjoy! Makes 4 - 6 servings.

Chili Cheesy Mac

Dinner is served...













Ingredients

  • 1 (16) oz bag of elbow macaroni 
  • 2 cups of Mexican style blend shredded cheese


Meat


  • 1 pound of ground turkey or beef
  • 1 Tbsp of dried oregano
  • 1/4 tsp of black pepper
  • 1/4 cup of chopped onions
  • 1/4 cup of chopped red or green bell peppers
  • 1 tsp of Emeril's Original Essense seasoning (or seasoning salt)
  • 2 Tbsp of all purpose flour


Sauce


  • 5 cups of water
  • 2 (3) oz cans of tomato paste
  • 1/2 cup of chopped tomatoes
  • 2 chicken bouillon cubes
  • 1/4 cup of brown sugar (optional)
  • 1 Tbsp of dried oregano
  • 1/4 tsp of chili powder


Directions
Preheat oven to 375° degrees


Prepare the macaroni according to the package directions and transfer the cooked macaroni to a 13"x 9" baking pan. Mix in a cup of the cheese and set aside.


To cook the meat, combine the meat and seasonings in a 10-inch skillet and cook until the meat is browned. 


While the meat is cooking add the 5 cups of water, tomato paste, bouillon cubes, brown sugar, oregano, and chili powder to a 2 quart pot. Cook for 10 minutes on medium heat. Stir the sauce as needed.


Drain the meat and stir in the peppers and onions. Return the meat to a medium heat and add the 2 tablespoons flour (this will help thicken the sauce). Stir the prepared sauce into the skillet with the meat and cook for 10 minutes or until the sauce is thickened. 


Add the meat and sauce mix to the prepared macaroni and cheese. Mix thoroughly and sprinkle the remaining cheese on top. Bake for 15 minutes. Enjoy with your favorite veggies and garlic bread! Makes 8 - 10 servings.

Strawberry Shortcake

While strawberries are still in season, this might be a good time to try this recipe. I especially like the biscuit that's used to make this. The kids tried to eat them all, I had to stop them.














For the biscuit
2 cups of all purpose flour
1 tsp baking powder
1 stick of butter, softened
1/2 cup of powdered sugar
1/4 cup of milk (I used almond milk)

For the filling
20 strawberries, sliced
3 cups of whipped topping
1/2 cup of powdered sugar

Preheat oven to 375° degrees.

In a bowl, sift together the flour and baking powder and set aside. In a separate bowl, cream together the butter and powdered sugar until well blended and then add the flour mixture. Mix well. Add the milk. Combine the mixture until its forms into a soft dough. This can also be done by kneading the dough a few times until all ingredients have blended together. 

You can prepare the biscuits for baking by either shaping them into 2 inch round biscuits and placing them on a lightly greased cookie sheet or by rolling the dough out to 1/2 inch thickness on a prepared floured sheet and cutting the dough using a biscuit cutter. 

Place the biscuits on a lightly greased cooking sheet and cook for 25 - 30 minutes or until the biscuit are a golden brown color. Cool on a rack for approximately 10-15 minutes.

While the biscuits are cooking, combine the sliced strawberries, and the powdered sugar in a bowl until all ingredients are blended well. Cover in chill in the refrigerator until the biscuits are ready. 

Once the biscuits are cool, break them into small chunks, (approximately 1/2 inch pieces). . 

To layer the strawberry shortcake, begin by adding 3 -4 pieces of the biscuit into individual 10 ounce bowls and then a layer of whipped topping, and then add a layer of strawberries. Repeat twice. and top with whipped topping if desired and enjoy. Makes four 10 ounce servings.
