Potato Kale and Turkey soup

One of my all-time favorite soups in the whole world! Potato, kale, and turkey make this soup delicious. This is indeed dinner-in-a-pot.















Ingredients
1/2 stick of butter
2 Tbsp of all purpose flour
3 cups of milk (I used almond milk)
2 cups of water
3 cups of chopped red potatoes
1 tsp of Italian seasoning
1/4 tsp  of black pepper
1/2 pound of cooked ground turkey (approximately 1/2 pound)
3 cups of kale, fresh or frozen

Directions
Heat a 4-quart pot on medium high heat. Add the butter. Once the butter is melted, stir in the flour until well blended. Stir in the milk and cook until the sauce has thickened. Add the water, potatoes, Italian seasoning, and black pepper. Lower the heat to medium and cook for approximately 20 minutes or until the potatoes have softened. Add the cooked turkey and kale and cook for another 10 minutes. Add the soup to bowls and let cool for approximately 5 minutes. Enjoy! Makes 4 - 6 servings.

Homemade Cinnamon Applesauce

I'm really excited about this one! This is my first time making applesauce. The kids have tasted it and they love it!























        


Ingredients

6 cups of peeled and sliced apples (I used organic gala apples)
1 tsp of ground cinnamon
1/4 cup of sugar (optional)
1 1/2 cups of water (leftover from cooking the apples)

Bring a 2-quart pot, half-filled with water, to a boil. Add the apples, cinnamon, and sugar and cook on medium heat for 10 minutes. Remove the apples from the water and let both the apples and the water cool for approximately 30 minutes. Add the apples and water to a food processor or blender, and mix until the apples are of a slightly creamy consistency. Cool in the refrigerator for 30 minutes. Enjoy! Makes 4 servings.

Grape Slushie

I made this for the kids today! Grapes and apples dominate this fun slushie. It's an all-fruit sweet slushie that the kids will love.









1 cup of cranberry grape juice
2 cups of frozen strawberries
2 cups of chopped apples
1 cup of fresh or frozen pineapple bits
1 cup of seedless red grapes

Add all ingredients in a blender and mix until all ingredients are well combined. Enjoy!

Strawberry Lemonade Smoothie

I'm trying another smoothie this morning. This one has a little sugar in it, but the sugar can be substituted with the sweetener of your choice. It's so sweet and tart at the same time. And yes, I love strawberries! :)













2 cups of frozen strawberries
1 1/2 cups of cold waters
1/4 cup of fresh lemon juice
1/4 cup of sugar (or sweetener of your choice)

Add all ingredients in a blender and mix until all ingredients are well combined. Enjoy!

Quick and Easy Sloppy Joes

Need something quick to cook for dinner this evening? Try these sloppy joes. I made them in about 20 minutes!











Ingredients
1 pound of ground turkey or beef

2 Tbsp of all purpose flour
2 cups of ketchup
1 cup of water
1/4 cup of chopped onions
2 Tbsp of Worcestershire sauce
2 Tbsp of chopped red bell peppers
2 Tbsp brown sugar 
1/2 tsp of chili powder
1/4 tsp of black pepper

Directions
Add the ground turkey or beef to a large skillet and cook on medium high for 10-15 minutes or until done. Drain the meat, if necessary. Stir the flour into the meat until well blended. Stir in the water and ketchup. Add the remaining ingredients and cook until the sauce has thickened (approximately 10 minutes). Enjoy with your favorites vegetables. Makes 4-6 servings.

Strawberry Blueberry Smoothie

This is a healthy, in-between-meals snack to enjoy with no guilt. It's my snack of choice for the day!
































Ingredients

  • 3 cups of frozen strawberries 
  • 1 cup of fresh blueberries 
  • 1 cup of almond milk



Directions
Mix all ingredients in a blender until well blended and serve! 
Makes 2 - 4 servings.

Slow-cooked Green Beans with Potatoes and Ham

I put this in the crock pot about an hour ago. I'm already looking forward to this evening's dinner. Slow-cooked green beans with potatoes and ham make an awesome combination.

Ingredients

  • 3 lbs of fresh or frozen green beans (broken into thirds or leave them whole if preferred)
  • 4 cups of peeled and cubed potatoes
  • 2 cups of cubed center cut ham steak
  • 1/2 stick of butter
  • 1/2 cup of chopped onions
  • 5 chicken bouillon cubes
  • 1/2 tsp black pepper
  • salt to taste

Directions
Fill a 6-quart or larger crock pot, half with water. Add all ingredients except of the onions. Cook on high for 6 hours or on low for 8 hours. Add the onions to the pot about an hour before the beans are done. Enjoy them with your favorite bread or other sides. (I usually enjoy this with a piece of cornbread.)

Homemade Fried Chicken Nuggets

Chicken can be cooked so many different ways. This is one recipe that the whole family loves. They are so good and crispy. #fried #Chicken

























Ingredients 

  • 12 boneless skinless chicken breast tenderloins, cut into 2 inch pieces
  •      (or 6 whole boneless skinless chicken breasts)
  • 4-5 cups of cooking oil (I used a Mediterranean blend)
  • 2 cups of all purpose flour
  • The egg white of 3 eggs
  • 1 Tbsp of Italian seasoning
  • 1 tsp of paprika
  • 1 tsp of sea salt
  • 1/2 tsp of black pepper

Directions
Season the prepared chicken with the Italian seasoning, paprika, sea salt, and black pepper. Set aside to marinate for 5 - 10 minutes.

Heat a large frying pan or deep fryer on high until heated and then lower the temperature to medium high.

Add the flour to a large zip bag or to a large tray. (This will be used for coating the chicken.) Dip the seasoned chicken in the egg whites and then add the coated chicken to the flour. I usually use a plastic bag as it helps to coat the chicken with little effort. If you are using a plastic zip bag, shake the bag to help coat the chicken fully. If you are using a tray or plate, place the chicken in the flour and coat the chicken with the flour by firmly pressing the chicken into the flour.

Once the chicken pieces are fully coated, add half of them to your deep fryer or frying pan, depending on the size of your cookware. Cook the chicken for 10 minutes on medium high  heat. Chicken should be a crisp golden brown when done. Repeat with the remaining chicken.

Enjoy with your favorite sauce and sides!

Festive Vegetable Dip

My snack of choice this afternoon.I added red peppers to this delicious dip to give it a little kick. It's not too spicy though and can be served to the kids as well.


Ingredients

  • 1 (8) oz package of cream cheese, softened (light or regular)
  • 1/2 cucumber
  • 2 small red peppers
  • 1/4 tsp Italian seasoning
  • 1/4 tsp dried cilantro
  • 1/4 tsp sea salt

Directions
Add half the cream cheese, cucumber, small red peppers, Italian seasoning, dried cilantro, and sea salt to a food processor or blender. Blend all ingredients until the mixture is of a creamy consistency. Remove the mixture from the food processor or blender and combine the mixture with the remaining cream cheese. Stir until the mixture is thick and creamy. Enjoy with your favorite vegetables or chips! 

Makes 4 servings.

Refrigerate any unused portion, for freshness.



Fresh Salsa

If you have an abundance of tomatoes from your garden, try this fresh salsa recipe. It requires just a few ingredients and goes well with tacos or nachos.














1 large tomato
1/3 cup of chopped cucumber
1/3 cup of chopped red bell pepper
1/2 cup of chopped green onions
1 Tbsp of white vinegar
1 Tbsp of lime juice
2 tsp of fresh or dried cilantro
1/4 tsp of black pepper

Toss all ingredients together in a bowl. Cover and let marinate in the refrigerator for an hour. Serve with your favorite nachos or tacos. Enjoy!

For a litte extra spice, add 1 chopped jalapeno pepper.

Red Potato Salad

One more side to add to your Labor Day meal! It's quick and easy to make. I cut some of the calories by using low-fat mayonnaise.



I enjoy the taste of boiled eggs in my potato salad. The boiled eggs give the potato salad a little bit of an extra kick to other flavors.

Ingredients

  • 15 small red potatoes (skin on)
  • 2 boiled eggs, chopped into small pieces, optional
  • 1 cup of low-fat mayonnaise
  • 1/2 cup of chopped green onions
  • 1 tsp of prepared mustard
  • 1/2 tsp of black pepper
  • 1/4 tsp Emeril's Original Essence or sea salt
Directions
Begin by filling a 4-quart pot, 3/4 of the way full, and bring to a boil. Add the potatoes. Lower the heat and cook for 30 - 35 minutes or until the potatoes are soft. Check to make sure the potatoes are soft by sticking a fork into them.

Once the potatoes are done, let them cool for 15 minutes and then chopped them into 1/2 inch pieces. Add the potatoes, chopped boiled eggs, chopped green onions, low-fat mayonnaise, prepared mustard, black pepper, and the Emeril's Original Essence into a bowl and stir just until the ingredients are combined. Do not over mix.

Place the salad into the refrigerator and cool for about one hour. Serve with your favorite meat and veggies. Enjoy!

Fresh Chicken Salad

Fresh Chicken Salad, it's what's for lunch today! You can enjoy this with your favorite bread or alone as a salad. Love, love!



Ingredients

  • 3-4 cooked boneless skinless chicken breast
  •     (cubed or broken into small pieces)
  • 20 grapes cut into small pieces
  • 1/2 chopped cucumber
  • 1 cup of low-fat mayonnaise
  • 1/3 cup of crushed whole almonds
  • 2 Tbsp of chopped onion
  • 1/4 tsp of black pepper
  • 1/4 tsp of Emeril's Original Essence


Directions
Combine all ingredients together and chill in the refrigerator for one hour. Enjoy! Makes 6 servings.
