Dinner tonight is simple, and this delicious addition made it complete.
Ingredients
- 1 16 oz bag of Rotini pasta
- 4 1/4 cups of shredded blend of cheddar and Monterey Jack cheese
- 1 cup of shredded extra sharp cheddar cheese
- 3 Tbsp canola oil (or the oil of your choice)
- 3 Tbsp all purpose flour
- 2 cups of 2% milk (fat free, almonda milk, half and half, or whole milk will work as well)
Directions
Preheat oven to 375° degrees.
Prepare the Rotini pasta according to the package directions.
In a heated medium saucepan, add the cooking oil and flour. Mix together and continue to cook on medium heat until thickened. Add the milk and continue to cook until the sauce has thickened. Remove from heat and stir in 1/4 cup of the cheddar and Monterey Jack cheese blend. Set aside to allow cheese to melt. (approx. 5 minutes)
Add prepared Rotini pasta, two cups of the cheddar and Monterey Jack cheese, and the extra sharp cheddar cheese into a 13" x 9" cooking pan and mix together. Stir the cheese sauce until well blended and pour over the Rotini pasta mix. Stir until well blended. Sprinkle the mix with the remaining 2 cups of cheddar and Monterey Jack cheese and cook for 15 minutes or until the cheese has fully melted throughout. Enjoy with your favorite veggies!

Dinner tonight was oh so good! This dish screams cheese and for good reason. :)
Ingredients
- 1 (16) oz package of spaghetti
- 4 cups of shredded sharp cheddar cheese or Mexican style blend shredded cheese
Meat
- 1 1/2 pounds of ground turkey or beef
- 1 Tbsp of Italian seasoning
- 1/4 tsp of black pepper
- 1/4 cup of chopped red or green bell peppers
Sauce
- 5 cups of water
- 4 (3) oz cans of tomato paste
- 1/2 cup of sugar (or to your taste)
- 2 Tbsp of Italian seasoning
- 1 tsp of salt
Directions
Preheat oven to 375° degrees
Prepare the spaghetti according to the package directions and transfer the cooked spaghetti to a 10" to 12" skillet (a 9" x 13" baking pan can also be used). Set aside.
To cook the meat, combine the meat and seasonings in a medium sized skillet and cook until the meat is browned.
While the meat is cooking add the 5 cups of water, tomato paste, sugar, Italian seasoning, and salt to a 2-quart pot. Cook for 10 minutes on medium heat. Stir the sauce as needed.
When the meat is done, drain it and stir in the peppers and onions. Cook for 5 more minutes, and then transfer the meat to the skillet with the spaghetti.
Stir the prepared sauce into the skillet with the meat and spaghetti. Stir until combined.
Stir in two cups of the cheese and top the spaghetti with the remainding two cups of cheese.
Place the prepared spaghetti in the oven and cook for 15 minutes or until the cheese has melted to your satisfaction.
Remove the skillet/pan from the oven and cool for 5 minutes and serve with your favorite vegetables or other sides.
Enjoy! Yields 8 - 10 servings.
Note: This recipe can be cut in half to make a smaller portion.

- 2 cups of sliced strawberries, fresh or frozen, thawed
- 20 crushed chocolate sandwich cookies, with the middle removed
- 1 (8) oz tub of light dairynwhipped topping
- 4 (8-10) oz glasses
Directions
Prepare the parfait layering each glass with two tablespoons of the crushed chocolate sandwich cookies, four slices of strawberries, and two rounded tablespoons of the light dairy whipped topping. Continue to layer in that order until the glasses are full. Top with the remaining whipped topping and crushed cookies. Enjoy immediately or refrigerate until ready to serve.
Makes 4 servings.
