A Shining Light by Judith Miller (Review)

Judith Miller has done it iagain! A Shining Light is one fantastic read.



This is a story of God's redeeming love and care.  It's a perfect rendition of love in action. I'm usually an avid reader of Amish Christian Fiction, however, I'm so glad I chose to read this heartwarming story of the Amana way of life.

After learning that her husband has been lost at sea, Andrea and her son Lukas set off on a journey to travel back home to live with her father in Iowa. Once they arrive, they find that her father is no longer living and has sold the farm to the Amana community. Left with no money and no place to live, Andrea and Lukas are taken in by this wonderful community known as the Amana village.

They both experience a love like they've never known before from the Amana people, and soon become a part of this loving community. 

After a time of living in this community their world is turned upside down, and it takes forgiveness on the part of Andrea, and the love of a good man, Dirk, to show her that God is a loving father and does allow His children to have second chances.

This book was a great read from start to finish. Admittedly, it was hard to put down and I was sad to see the story come to an end.

Granola Banana Parfait

Mmmmm... this is amazing and unbelievably quick to make! It's a single serving dessert... no need to share. :)



This dessert is measured for one serving but can be doubled to make as many servings as you'd like. 

Ingredients
  • 2 packs of granola thins, dark chocolate
  • 1/2 of a banana, sliced
  • 2 Tbsp of dairy whipped topping

Directions

Prepare the parfait by first layering one granola thin and then four pieces of the banana, 2 Tbsp of whipped topping, the remaining four banana slices, and then top it with the other granola thin. Top with a dollop of whipped topping and Enjoy or chill until ready to serve.


Makes 1 serving.

Quick Vegetable Soup

My lunch today is filled with my favorite vegetables. It's a quick hot soup made in just five minutes! This is definitely a lunch on the run but it's well worth it and will give you that much needed energy to make it through the afternoon.


Ingredients

  • 1 chickent bouillon cube
  • 1 cup of water
  • 1 cup of chopped frozen kale
  • 1/2 cup of frozen green beans
  • 1 Tbsp chopped frozen carrots
  • 2 Tbsp of chopped red bell pepper
  • 1 tsp of Italian seasoning or your favorite seasoning (I use 21 seasonings)
  • a sprinkle of crushed red peppers 

Directions
Add all ingredients to a microwave safe bowl, stir and cook on high for 2 - 3 minutes or until the vegetables are cooked to your desire. Enjoy!

Chocolate Cheesecake Bar

This dessert is definitely an indulgence! <3



Ingredients

Crust

  • 3 cups of crushed vanilla wafer cookies
  • 1 1/2 cups of crushed almonds
  • 1/2 stick of butter, melted
Filling
  • 1/4 cup of cocoa
  • 1 cup of peanut butter
  • 2 cups of powdered sugar
  • 2 (8) oz packs of cream cheese
  • 1/2 cup of milk (I used almond milk)

Topping
  • 1 (8) container of whipped topping
  • 1/2 cup of the remainder cookie and almond mixture 


Directions


Preheat oven to 350° degrees.

Lightly grease an 13"x 9" baking pan and set aside. Combine the crushed vanilla wafer cookies, crushed almonds, and the melted butter until thoroughly mixed. Set aside 1/2 cup of the mixture for the topping. Add the mixture to the prepared baking pan and use your had to pat the mixture to flatten it. Make sure that the mixture covers the entire bottom of the pan. Cook the crust for 10 minutes. The crust should be a golden brown. Remove the pan from the oven and set it aside for the crust to cool. 


While the crust is cooling, use a hand mixer to mix together the cocoa, peanut butter, powdered sugar, cream cheese, and milk until the mixture is creamy. 


When the crust is cool, spread the creamy mixture evenly onto the crust. Spread the whipped topping on top of the creamy filling and sprinkle the remaining cookie and almond mixture on top of the whipped topping. chill for 3 - 4 hours. Enjoy. 


Yields 8 - 10 servings
