Lemon Cookie Parfait

Try this for a quick dessert this evening!















Ingredients

  • 1 (4) oz package of instant vanilla pudding (prepared)
  • 1 (8) oz tub of lite whipped topping
  • 1/4 tsp of lemon extract
  • 1 pack of thin lemon cookies
  • 4  (8-10) oz glasses


DirectionsStir together the lite whipped topping and the lemon extract.
Begin layering each glass by adding two crushed cookies, two rounded tablespoons of vanilla pudding, and two rounded tablespoons of whipped topping mixture. Continue to layer in that order until the glasses are full. Top with the remaining whipped topping. Enjoy immediately or  refrigerate until ready to serve. Makes 4 servings.

Candy Corn Parfait

There are so many things that I love about this time of year! My most favorite is candy corn. This one is for the kids. They will have a blast helping you prepare it!


 

Ingredients
1 (20) oz can of pineapple chunks or 
    crushed pineapples
1 (15) oz can of mandarin oranges
1 (8) oz container of lite whipped topping
1 cup of marshmallow creme 
1/2 cup of crushed raw pumpkin kernels
Yellow food coloring
4 (8) oz glasses

Directions

In a large mixing bowl, combine half of the lite whipped topping with the marshmallow creme, until nice and smooth. Stir in the pineapples. Add enough food coloring to make the mixture a bright yellow. I used 20 drops.

Prepare the parfaits by first adding a Tbsp of the pumpkin kernels, and then topping the glass 1/3 of the way full with the creamy mixture. Add another Tbsp of the pumpkin kernels and then add the mandarin oranges to fill the glass 2/3 of the way full. Add another Tbsp of the pumpkin kernels and then top with the remaining lite whipped topping. Serve immediately or chill until ready to serve. Enjoy! Makes 4 servings.

Peach Cobbler

One of my favorites desserts as a child was peach cobbler. When my mom made it, it was definitely a treat. This is a slightly different twist on it.
















Ingredients
5 cups of fresh sliced peaches 
    (canned peaches is also an option)
3 cups all purpose flour
1 cup of sugar (divided in half)
1 cup of butter softened
1 tsp baking powder
1 tsp of vanilla extract
1/2 cup of milk


Directions

Preheat oven to 350° degrees and then spray a 13" x 9 " pan lightly with cooking oil spray. Place the sliced peaches in the pan and sprinkle with half of the sugar. 

In a bowl, mix together the remaining sugar, flour, and butter until well blended. Add the milk and vanilla extract and combine all ingredients together (it should be a soft dough-like consistency). 

Top the peaches with the flour mixture, making sure to place some of the dough around the peaches (for the added breaded texture). Note: the dough can also be rolled out to 1/4 inch thickness for a lighter crust.

Cook for 40 minutes or until the crust is golden brown. Remove from the oven and cool for approximately 30 minutes! Enjoy!

Fruit Smoothie with Kale

I added kale to this fruit smoothie. With three servings of fruit and one serving of vegetables, I'm off to a healthy start today!































Ingredients

  • 1 cup of almond milk
  • 2 large bananas (ripe is best)
  • 2 cups of fresh kale (frozen will work too)
  • 1 cup of fresh blueberries
  • 2 cups of frozen strawberries

Directions
Add the ingredients to the blender in the order listed. Blend all ingredients on high and mix until all ingredients are combined thoroughly. Enjoy as a dessert or as an in-between-meal snack. Makes 4 servings. 

Note: Whole or 2% milk can also be used in this recipe.

Berries and Cream

Try this dessert this evening. It's berry light and delicious! :)


Ingredients
  • 1 cup of fresh blueberries
  • 1 cup of fresh raspberries
  • 1 cup of fresh blackberries
  • 1 cup of dairy whipped topping 
  • 1 cup of plain Greek yogurt
  • 2 Tbsp of powdered sugar 
  • 1 tsp of vanilla extract
  • 4 (8) oz glasses
Directions
In a small bowl, whip together the Greek yogurt, dairy whipped topping, powdered sugar, and vanilla extract, until well blended.

Prepare this treat by first layering a mixture of the fruit and then a heaping tablespoon of the cream mixture. Repeat the layers twice more, or until the glass is full. Enjoy immediately or chill in the refrigerator until ready to serve. Makes 4 servings

Spaghetti Pasta Salad

One of my favorite salads. It's what's for lunch today!






Ingredients

  • 1 (8) oz box of thin spaghetti
  • 1 cup of zesty Italian dressing
  • 10 slices of salami (cut in strips)
  • 1/2 cup of cubed cheddar cheese
  • 1/2 cup of cubed mozzarella cheese
  • 1/2 cup of chopped Roma tomatoes
  • 1/2 cup of chopped cucumbers
  • 1/2 cup of chopped black olives
  • 1 Tbsp Italian seasoning
  • 1/4 tsp of black pepper


Directions
Prepare the spaghetti according to the package directions and cool. 


Add all ingredients in a bowl and stir until well blended. Chill in the refrigerator for 1 hour or until ready to serve. Enjoy!
Makes 4-6 servings.

Apple Cinnamon Parfait

I love the taste of apples and cinnamon, especially when they are combined together.


Ingredients
  • 4 cups of unpeeled apples, chopped
  • 1 cup of crushed almonds
  • 1 cup of plain Greek yogurt
  • 1/2 tsp of ground cinnamon
  • 3 Tbsp of honey
  • 4 (8) oz glasses


Directions
In a small bowl, whip together the Greek yogurt, ground cinnamon, and honey, until well blended.

Prepare the parfait by first layering one tablespoon of the crushed almonds, one tablespoon of the yogurt mixture,  and approximately eight pieces of the chopped apples. 


Repeat in this order, twice more, or until the glass is full. Enjoy immediately or chill in the refrigerator until ready to serve

Makes 4 servings.

Vanilla Milkshake

This shake is made using almond milk and a banana, no sugar added. It's a great way to get your calcium for the day. The best part is that it's low in calories! No guilt here. :)











large banana (ripe is best)
2 cups of almond milk (frozen in an ice tray)
1 cup of almond milk
2 Tbsp of vanilla  extract

Combine all ingredients in a blender and mix until all ingredients are well blended. Enjoy as a dessert or as an in-between-meal snack. Makes 4 servings. 

Note: Whole or 2% milk can also be used in this recipe.

Banana Cream Parfait

This tastes as good as it looks. Dessert for two...why not share? 



Ingredients

Cookie Crumble
  • 2 cups of crushed vanilla wafer cookies
  • 1 cup of crushed almonds
  • 1/2 stick of butter, melted

Filling

  • 1 (4) oz package of instant vanilla pudding, 
  •     prepared by package directions
  • 1 (8) oz container of whipped topping
  • 3 bananas, sliced
  • 1 Tbsp fresh lemon juice
  • 4 (8) oz glasses, or 2 (16) oz glasses


Directions

Preheat oven to 400° degrees.

Lightly grease a cookie sheet and set aside. Combine the crushed vanilla wafer cookies, crushed almonds, and the melted butter until thoroughly mixed. Add the mixture to the prepared cookie sheet. Spread the mixture throughout the entire cookie sheet. Cook the cookie mixture for 10 minutes. The crust should be a golden brown when done. Remove the cookie mixture from the oven, and set it aside to cool (approximately 15 - 20 minutes).


While the crust is cooling, brush the banana slices with a small amount of lemon juice to keep the bananas from turning brown.


When the crust is cool, prepare the parfait by first layering 2 Tbsp of the cookie crumble, 2 Tbsp of whipped topping, 2 Tbsp of vanilla pudding, and the banana slices (approximately 6). Repeat in this order, two more times, or until the glass is full. Chill for one hour. Enjoy! Makes 2 - 4 servings.

Blueberry Peach Smoothie

Blueberries and frozen peaches are paired together to make this smoothie cool, light, and refreshing!
























Ingredients

  • 2 large bananas (ripe is best)
  • 2 cups of frozen peaches
  • 1 cup of fresh blueberries
  • 1 cup of almond milk

Directions
Combine all ingredients in a blender and mix until all ingredients are well blended. Enjoy as a dessert or as an in-between-meal snack. Makes 4 servings.
