Apple Crisp



Apple crisp is one of my favorite fall desserts. The crisp and apple together is so delicious you’ll want to go back for more. :)

Gather your ingredients together.




Ingredients
5 cups sliced apples (I usually used Gala, Golden Delicious, or Granny Smith)
1 tsp ground cinnamon
1/2 cup of water
1 1/2 cups white sugar
1 cup of butter softened
1 1/2 cups all purpose flour

Directions
Preheat oven to 350 degrees and then spray a 13" x 9 " pan lightly with cooking oil spray. Place the apples in the pan and sprinkle with the ground cinnamon and water.



In a bowl, mix together the sugar and butter until well blended. Add the flour and mix until all ingredients come together (it should be a soft dough-like consistency). Completely cover the apples with the flour mixture.

Place in a preheated oven and cook for 30-35 minutes or until the crust is golden brown. Enjoy!

Banana Blueberry Smoothie

A simple smoothie with so much flavor. Banana is the star in this treat!

















Ingredients
3 medium size bananas
1 cup of fresh blueberries
2 cups of almond milk (frozen in an ice tray)
1 cup of almond milk

Directions
Combine all ingredients in a blender and mix until well blended. Enjoy as a dessert or as an afternoon snack. Makes 4 - 6 servings.

Peanut Butter Shortbread Cookie Bar

1 stick of butter, softened
1/2 cup of powdered sugar
1/2 tsp of vanilla
1 cup of all purpose flour

Homemade Mashed Potatoes

There's something so wonderful about mashed potatoes. It just seems to make a meal complete. This is one of my faves!



Ingredients

  • 8 medium sized red potatoes
  • 1 stick of butter, softened
  • 1/2 cup of milk
  • 2 oz or 1/4 of an 8 oz package of cream cheese, softened
  • 1 tsp of salt



Directions

Fill a medium size pot to 3/4 full with water and heat to a boil.

While the water is boiling, peel the potatoes.



Slice the potatoes to approximately 1/4 inch in thickness and then rinse them thoroughly.


Add the potatoes to the boiling water. Reduce the heat to medium and cook for 20 minutes or until the potatoes have softened thoroughly.



Drain the potatoes. 



In the same pot, add the softened butter and then return the drained potatoes to the pot as well. Add the softened cream cheese, milk, and salt. (I usually keep the pot on simmer while I mash the potatoes to keep them warm.)



Mash the potatoes either by using a potato masher or hand blender. Use a hand blender to thoroughly blend the butter, cream cheese, milk, and salt.  The potatoes should be smooth and creamy when complete.



Enjoy with your favorite meat and vegetables! Makes 6 servings. 


Chocolate Cookie Delight

Got a craving for chocolate? This is a quick chocolaty dessert that's made with just three ingredients. It's quite an indulgence, but a little bit won't hurt.





Ingredients
1 (13) oz pack of fudge striped shortbread cookies
    (cut in half) Save 2 cookies for the topping.
1 package of instant chocolate pudding (prepared)
1 (8) oz container of lite dairy whipped topping, thawed

Delicious Nacho Bake

This is so delicious! It's dinner in a pan. There's no need for anything else.


Nachos, Rolisweets












Ingredients
1 pack of crescent rolls
1 1/2 lb. of ground turkey (or beef if you prefer)
1 Tbsp cumin
1 tsp of dried cilantro
1/4 tsp black pepper
1/4 cup chopped onions
1 16 oz. can of re-fried beans
2 cups of salsa
1/2 cup of lite sour cream
3 cups of thinly shredded Mexican blend cheese 
1/2 (13) oz bag of restaurant style tortilla chips
2 cups of shredded lettuce
Nonstick cooking oil spray

Directions
Preheat oven to 350° degrees.

Prepare a 13" x 9" baking pan by spraying it with nonstick cooking oil spray and then unroll the crescent rolls onto the prepared baking pan. Using your fingers, pinch the perforated seams together so that the dough is in the shape of a rectangle and covers the entire bottom of the pan.  Set aside.

Heat a large skillet on medium high heat and add the meat. Season the meat with the cumin, cilantro, and black pepper and cook until browned. Add the onions when the meat it almost done.



While the meat is cooking, add the salsa and sour cream to a small bowl and stir together until well blended.


When the meat is done cooking, add the re-fried beans to the meat and heat and stir until the beans are well blended with the meat. 

Next, add the meat mixture to the prepared baking pan.


 Top the meat with one cup of the shredded cheese.


 Top the cheese with the salsa and sour cream mixture.



 Top the salsa mixture with the remaining cheese.


Bake for 15 minutes. Remove the pan from the oven and top with the nachos. Place the pan back into the oven and cook for four more minutes.



 Remove the pan from the oven and top with the shredded lettuce and serve!

Makes 6 - 8 servings.

Apple Cider Smoothie

Another one of my fall favorites is apple cider! I'm enjoying this fantastic smoothie as my treat for today.



Ingredients
2 cups of apple cider
2 cups of almond milk (frozen in an ice tray)
1 medium banana (ripe is best)


Directions
Combine all ingredients in a blender and blend thoroughly. Enjoy as a dessert or as an in-between-meal snack.
Makes 4  servings.

Fall Trail Mix

This is a nice in-between-meal snack for kids that can be enjoyed anytime of the day!






Ingredients
1/2 cup of dried cranberries
1/2 cup of candy corn
1/2 cup of almonds
1/4 cup of dried raw pumpkin seeds
1/4 cup of semisweet chocolate chips

Directions
Add all ingredients to a medium size plastic storage bag. Shake to combine and serve! Makes (4) 1/2 cup servings.
