Homemade Mashed Potatoes

There's something so wonderful about mashed potatoes. It just seems to make a meal complete. This is one of my faves!



Ingredients

  • 8 medium sized red potatoes
  • 1 stick of butter, softened
  • 1/2 cup of milk
  • 2 oz or 1/4 of an 8 oz package of cream cheese, softened
  • 1 tsp of salt



Directions

Fill a medium size pot to 3/4 full with water and heat to a boil.

While the water is boiling, peel the potatoes.



Slice the potatoes to approximately 1/4 inch in thickness and then rinse them thoroughly.


Add the potatoes to the boiling water. Reduce the heat to medium and cook for 20 minutes or until the potatoes have softened thoroughly.



Drain the potatoes. 



In the same pot, add the softened butter and then return the drained potatoes to the pot as well. Add the softened cream cheese, milk, and salt. (I usually keep the pot on simmer while I mash the potatoes to keep them warm.)



Mash the potatoes either by using a potato masher or hand blender. Use a hand blender to thoroughly blend the butter, cream cheese, milk, and salt.  The potatoes should be smooth and creamy when complete.



Enjoy with your favorite meat and vegetables! Makes 6 servings.
