Bowtie Pasta Salad With Chicken

I'm a big fan of pasta salads, and this one is no exception! It's so good and filling...this is what I'm enjoying for lunch today. 


Ingredients

  • 4 - 5 cups of cooked bowtie pasta
  • 2 cups of cooked, chopped boneless chicken breast
  • 1 cup of peppercorn ranch dressing
  • 2 cups of fresh kale or spinach
  • 1 cup of diced tomatoes
  • 1 tsp of cilantro 
  • 1/4 tsp of black pepper


Directions
Add all ingredients in a bowl and stir until well blended. Chill in the refrigerator for 1 hour. Enjoy!


Makes 4-6 servings.

Oranage Banana Smoothie

I'm enjoying this fantastic smoothie today! It's very simple with two servings of fruit.


Ingredients
  • 4 mandarin oranges or clemintines
  • 2 large bananas, ripe is best
  • 2 cups of almond milk (frozen in an ice tray)
  • 1 cup of almond milk

Directions
Add all ingredients in a blender and mix until all ingredients are well blended together. Enjoy as an afternoon snack or as a dessert. 







Makes four 8-oz servings.
