Fall Festive Salad

I'm in love with salads, and this one is no exception! It's what's for dinner. We enjoy this with peppercorn ranch dressing and toasted french bread. 


Ingredients

  • 6 cups lettuce salad mix
  • 1 cup finely chopped cucumbers
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/3 cup of chopped green onions
  • 2/3 cup of chopped orange or yellow bell peppers
  • 1 cup dried cranberries
  • 1/2 cup of raw pumpkin kernels
  • 9 oz thinly sliced deli oven roasted turkey breast
  • 1 cup of thinly shredded Mexican blend cheese
  • 13" x 9" glass serving dish

Directions
Begin preparing the salad by layering the ingredients in the serving dish in this order: the lettuce salad mix, chopped cucumbers, sprinkle the pepper and Italian seasoning, add the green onions, orange or yellow bell peppers, dried cranberries, raw pumpkin kernels, sliced turkey breast, and shredded cheese. Enjoy with your favorite salad dressing or chill until ready to serve! Makes 4 - 6 servings

Cookies and Cream Shake

My daughter had a request for a shake with cookies! This is what I came up with. 































    


Ingredients

  • large banana (ripe is best)
  • 2 cups of almond milk (frozen in an ice tray)
  • 1 cup of almond milk
  • 2 Tbsp of vanilla  extract
  • 20 finely crushed chocolate sandwich cookies
  • 4 (8) oz glasses


Directions
Combine all ingredients in a blender and mix until all ingredients are well blended. Add two tablespoons of crushed cookies to each shake. Stir and enjoy as a dessert or as an in-between-meal snack. Makes 4 servings. 

Note: Whole or 2% milk can also be used in this recipe.

Cream Cheese Frosting

Ingredients
3 cups of powdered sugar
1 tsp of vanilla extract

Applesauce Cake

What I love most about this cake is that It's made using applesauce! The combination of applesauce, nuts, and raisins make this a definite treat. I topped it with a little cream cheese frosting for added flavor.









Ingredients

  • 2 cups of all-purpose flour
  • 1/2 Tbsp or 1 1/2 tsp of baking powder
  • 1/8 teaspoon of salt
  • 1 stick of butter, softened
  • 1 cup of firmly packed brown sugar
  • 1 egg
  • teaspoon of vanilla extract 
  • 1/4 teaspoon of cinnamon
  • 1/3 cup of apple cider
  • 1 cup of applesauce
  • 1 cup of crushed nuts (your choice)
  • 1/2 cup of raisins

Directions
Preheat oven to 350° degrees.

Grease and lightly flour an 8" x 8" square baking pan and set aside. (I lined my pan with aluminum foil for easy removal after baking.)

In a small bowl, sift together the flour, baking powder, and salt, then set aside.


In a large bowl, add the butter and packed brown sugar and mix with a hand blender until smooth and creamy.


Add the eggs, vanilla extract, and cinnamon to the mixture and mix until well blended. Stir in the apple cider and then add the applesauce. Combine all ingredients together. Stir in the crushed nuts and raisins.



Add the flour mixture and stir until the mixture is well blended and smooth. Transfer the mixture to the prepared baking pan and cook for 40 minutes or until a toothpick inserted into the center comes out clean. 



Remove from the oven and let the cake cool for approximately 30 minutes or until cool enough to add the frosting.

Easy Beef Stroganoff

Dinner this evening. A simple, quick dish that's filling and delicious!













Ingredients
  • 3 Tbsp of canola cooking oil
  • 3 Tbsp of all purpose flour
  • 4 cups of milk
  • 4 thinly sliced sirloin steaks (chopped) 
  • 4 beef bouillon cubes
  • 1/2 tsp of black pepper
  • 4 cups of uncooked homemade style egg noodles
  • 1 whole onion, sliced
  • 1/2 cup of sour cream


Directions
Heat a 10" skillet on medium high and add the cooking oil. Heat the oil until it's hot. Add the chopped steak and cook for 10 minutes or until the meat is done. Add the flour and stir until the meat is coated with the flour. Stir in the milk, beef bouillon cubes, and the black pepper, and cook on medium heat until the sauce thickens.  


Once the sauce has thickened, add the egg noodles and onions and cook for 10 minutes or until the noodles are a nice firm softness. Stir in the sour cream and cook for 5 more minutes. Serve with your favorite vegetables. Enjoy! 
Makes 4 - 6 servings.

Orange Strawberry Smoothie

I'm trying another smoothie combination today. This one is tangy and sweet all at the same time.



















Ingredients
2 cups of frozen strawberries
3 ripe bananas
1 (12) oz frozen can of unsweetened orange juice 
1 cup of almond milk


Directions
Add all ingredients in a blender and mix until all ingredients are well blended. Enjoy! Makes four 8-oz servings.

Orange Cupcake Frosting

This is the frosting that goes with the orange sherbet cupcakes. It's very simple to make.



Ingredients

  • 2 cups of powdered sugar
  • 2 Tbsp of milk
  • 1/4 tsp of vanilla extract
  • 1/4 tsp of lemon extract
  • yellow food coloring (10 drops)
  • red food coloring (6) drops


Directions
Add all ingredients into a medium sized bowl and stir until well blended. Stir in the food coloring until the mixture has turned orange. The frosting should be smooth and thick.

Chill until ready to use.

Orange Sherbet Cupcakes


The kids are going to enjoy decorating and eating these cupcakes when they get home from school. I can't wait to share it with them! I will post the frosting recipe shortly.

Rolisweets Orange Sherbet Cupcakes

Ingredients


  • 1 cup of all purpose flour
  • 1/2 tsp of baking powder
  • a pinch of salt
  • 1 cup of powdered sugar
  • 1 stick of butter, softened
  • 1 egg
  • 1/4 tsp of vanilla extract
  • 1/4 tsp of lemon extract
  • 1/2 cup of milk
  • 1 package of orange flavor dessert gelatin

Directions
Preheat oven to 350° degrees.
Grease and lightly flour a cupcake pan and set aside. 

In a small bowl, sift together the flour, baking powder, and salt, then set aside.


In a large bowl, add the butter and powdered sugar and mix with a hand blender until smooth and creamy. Add the eggs, vanilla extract, and lemon extract to the mixture and mix until well blended. Stir in the milk.


Add the gelatin and mix well. Note: I added the whole pack, however, if you desire a less sweetened cupcake add only half of the pack.

Add the flour mixture and stir until the mixture is well blended and smooth. 




Transfer the mixture to the prepared cupcake pan by filling each cup 3/4 of the way full. 



Cook for 20 - 25 minutes or until a toothpick inserted into the center comes out clean. 


Remove from the oven and let the cupcakes cool for approximately 30 minutes. 

Have fun decorating them with your kids. Makes 9 - 12 servings.

Strawberry Pineapple Smoothie

This is now my favorite smoothie. It's so tangy and sweetened with the taste of pineapples.















Ingredients
2 cups of frozen strawberries
1 (20) oz can of unsweetened crushed pineapples
1 cup of almond milk


Directions
Add all ingredients in a blender and mix until all ingredients are well blended. Enjoy! Makes four 8-oz servings.

Most Amazing Pound Cake


Pound cake is one of the most amazing cakes. There's no need for frosting, as it is a cake that stands by itself. A little crisp on the outside and moist on the inside. Delish!











Ingredients

  • 2 cups of all purpose flour
  • 1 tsp of baking powder
  • a pinch of salt
  • 2 cups of powdered sugar
  • 2 sticks of butter, softened
  • 2 eggs
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of lemon extract
  • cup of milk


Directions
Preheat oven to 350° degrees.
Grease and lightly flour a 9"x 5" loaf pan and set aside. 

In a medium size bowl, sift together the flour, baking powder, and salt, then set aside.

In a large bowl, add the butter and powdered sugar and mix with a hand blender until smooth and creamy. Add the eggs, vanilla extract, and lemon extract to the mixture and mix until well blended. Stir in the milk. Add the flour mixture and stir until the mixture is well blended and smooth. 

Transfer the mixture to the prepared loaf pan and cook for 1 hour and 15 minutes or until a fork inserted into the center comes out clean. 

Remove from the oven and let the cake cool for approximately 30 minutes. 

Enjoy with a cup of tea or coffee, or with your favorite ice cream. Makes 8 - 10 servings.

Quick Oatmeal

If you like the taste of oatmeal, this is a quick and delicious way to prepare a single serving in the morning!








Ingredients
1 cup of water
1/2 cup of whole grain old fashioned oats
1 tsp of packed brown sugar
1 tsp of maple syrup
1 Tbsp of dried cranberries
1 Tbsp of crushed almonds
a sprinkle of salt (if desired)

Directions
Add the quick rolled oats and the water to a medium microwaveable safe bowl. Stir the ingredients together and microwave on high for 1 minute. Remove from the microwave and add the cranberries and almonds and salt to taste. Enjoy!

Note: Watch the oatmeal as it cooks to avoid it bubbling up and overflowing. Also, some microwaves may require a longer cooking time.

Spiced Pumpkin Smoothie

Another delicious smoothie. It's sweetened using a banana, but pumpkin is the star of this smoothie!














Ingredients
1 large banana (ripe is best)
2 cups of almond milk (frozen in an ice tray)
1 cup of pumpkin puree
1 cup of almond milk
1/2 cup of applesauce
1/8 tsp ground cinnamon

Directions
Combine all ingredients in a blender and mix until well blended. Enjoy as a dessert or as an afternoon snack. Makes 4 - 6 servings.
Coffee is one of my favorite drinks to enjoy in the morning. In an effort to avoid adding sugar, I try different things to spice it up. I enjoy adding a cinnamon stick, coffee creamer, and a 1/8 tsp of cinnamon spice blend to my coffee. No need for sugar!

Mint Chocolate Shake

A nice cool shake with a hint of mint in it. Delicious!




Ingredients

1 large banana (ripe is best)
2 Tbsp of cocoa
2 cups of almond milk (frozen in an ice tray)
1 cup of almond milk
4 mini mint chocolate patties
1/4 tsp of chocolate flavoring (optional)

Directions 

Combine all ingredients in a blender and mix until well blended. Enjoy as a dessert or as an afternoon snack. Makes 4 - 6 servings.
