Chocolate Cookie Parfait

A quick, single dessert that takes 10 minutes to make.


Ingredients

  • 1 (4) oz package of instant chocolate pudding (prepared)
  • 1 (8) oz tub of whipped topping
  • 1 pack of dark chocolate thin cookies
  • 4  (8-10) oz glasses


Directions
Begin by layering each glass with two crushed cookies, two rounded tablespoons of whipped topping, and two rounded tablespoons of chocolate pudding. Continue to layer in that order until the glasses are full. Top with the remaining whipped topping. Enjoy immediately or  refrigerate until ready to serve. Makes 4 servings.

Chocolate Chip Milkshake

This milkshake is sweetened using a banana and chocolate chips. I hope you enjoy it as much as I did. :)

1 large banana
2 cups of almond milk (frozen in an ice tray)
1 cup of almond milk
1/4 - 1/2 cup of chocolate chips (depending on your taste)
1/2 tsp of vanilla extract

Combine all ingredients in a blender and mix until all ingredients are well blended. Enjoy as a dessert or as an afternoon snack. Makes 4 servings. 

Note: Whole or 2% milk can also be used in this recipe.

Cheese Steak Sandwich

This is how we do steak and cheese! Dinner this evening.

Ingredients
2 -3  loaves of french bread, cut into 3 - 6 inch pieces
1 1/2 pounds of thin sliced sirloin steaks (approximately 8)
8 slices of provolone or Havarti cheese
1 whole sliced onion
1 sliced green bell pepper
1 sliced red bell pepper
Sliced banana peppers, if desired
Mayonnaise, if desired

Directions
Lightly spray a large non-stick skillet with cooking oil spray. Heat the skillet on medium high heat. Add the meat and cook for 5 - 10 minutes until it browned. If desired, use a spatula to break the meat up as its cooking. 

While the meat is cooking, heat a small lightly oiled skillet and saute the onions and peppers.

When the meat is done, put a slice of cheese on each piece and cover the skillet to allow the cheese to melt completely. Transfer the steak and cheese to a serving plate and prepare the sandwiches by first cutting the bread in half and then adding the steak and cheese. Top each sandwich with the peppers and onions and any other toppings that you desire. I usually add banana peppers to mine.

Slow-cooked Pork Tenderloin

I love to cook meals in my slow-cooker. Whether preparing a meal at night or in the morning, you can't go wrong with this dish!



Ingredients


  • 1 whole pork tenderloin
  • 10 small red potatoes
  • 1 cup of baby carrots
  • 1 cup of barbecue sauce (your choice)
  • 1 whole sliced onion
  • 1/2 tsp black pepper
  • salt to taste


Directions
Fill a 6-quart or larger crock pot, 1/4 full with water. Add the meat and sprinkle the pepper and salt onto the meat. Pour the barbecue sauce over the meat and then layer it with the sliced onions. Add the carrots and potatoes and cook on high for 4 - 6 hours or on low for 8 hours. Enjoy this meal-in-a-pot with your favorite bread. (I usually enjoy this with a piece of cornbread.)


 

Piña Colada Smoothie

If you like the taste of pineapples and coconut, you'll love this smoothie! This is my snack choice for the day.






















Ingredients
4 cups of ice cubes
3 medium size bananas
1 (20) oz can of crushed pineapple (unsweetened)
1/2 cup of unsweetened coconut flakes

Combine all ingredients in a blender and mix until well blended. Make certain that the coconut is fully ground up. Enjoy as a dessert or as an afternoon snack. Makes 6 - 8 servings.

Strawberry Cheesecake Lush


Strawberry and cheesecake always equals delicious, and this is no exception! Dessert this evening.



Crust

  • 2 cups of crushed vanilla wafers cookies
  • 1 cup of crushed almonds
  • 1/2 stick of butter, melted
Filling
  • 2 cups of powdered sugar
  • 2 (8) oz packages of cream cheese
  • 1/4 cup of milk 
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of lemon extract

Topping
  • 2 cups of fresh strawberries, sliced
  • 2 Tbsp of white sugar
Directions

Preheat oven to 350° degrees.
Lightly grease an 8"x 8" baking pan and set aside. Combine the crushed vanilla wafer cookies, crushed almonds, and the melted butter until thoroughly mixed. Add the mixture to the prepared baking pan and use your had to pat the mixture to flatten it. Make sure that the mixture covers the entire pan. Cook the crust for 10 minutes. The crust should be a golden brown. Remove the pan from the oven and set it aside for the crust to cool. 


While the crust is cooling, use a hand mixer to mix together the powdered sugar, cream cheese, and the vanilla and lemon extract until the mixture is creamy. Add the milk and stir until well blended.

When the crust is cool, spread the creamy mixture evenly onto the crust.Gently stir together the strawberries and sugar and the strawberries evenly on top of the creamy mixture. chill for 3 - 4 hours. Enjoy! Makes 6 - 8 servings.

Strawberry Peach Smoothie

I'm trying another smoothie this afternoon. Just three ingredients and you also get two servings of fruit!















Ingredients                                                                                                          
  • 3 cups of frozen peaches
  • 2 cups of fresh strawberries
  • 1/2 cup of cranberry/grape juice (or the juice of your choice)

Add all ingredients in a blender and mix until all ingredients are well combined. Enjoy! Makes 2-4 servings.

Breakfast Sandwich

This is my quick go to sandwich in the morning. I used turkey bacon so it only took my 5 minutes to make! This sandwich can be eaten with or without meat.











Ingredients
2 pieces of cooked bacon, or 1 sausage patty
1 egg
1 slice of your favorite cheese
a sprinkle of salt or pepper, if desired
2 slices of bread

Directions
For best result, use a medium size microwave safe bowl, with a 3-inch width bottom.Spray with non-stick cooking spray. Add the egg. Season it, if desired. Use a fork to break up the yoke just a little bit. Microwave the egg for 30 seconds. Add the slice of cheese and microwave for 20 - 30 more seconds. Toast the bread and add the egg, cheese and bacon to the bread. Enjoy!

Turkey Burgers with Gravy


Turkey Burgers were our added addition to dinner today. They are quick to make and very flavorful.

























Ingredients

Gravy

  • 3 Tbsp of canola cooking oil
  • 3 Tbsp of all purpose flour
  • 4 cups of water


Burgers

  • 1 1/2 pounds of ground turkey
  • 2 Tbsp of chopped onions
  • 1 sliced whole onion


Seasoning

  • 2 Tbsp of Worcestershire sauce
  • 1 tsp of salt
  • 1/2 tsp of black pepper


Heat a 10" skillet on medium high and add the cooking oil. Heat the oil until it's hot. Stir in the flour and cook until the flour is a golden brown color. Pour in the four cups of water and stir until combined. Continue to cook on medium high heat.

In a large bowl, add the ground turkey and chopped onions and mix well. Form the meat into burgers (approximately 3 inches in width). Add the burgers, sliced onions, black pepper, and the salt to the prepared gravy. Sprinkle the Worcestershire sauce over the burgers for added flavor. Turn the heat down  and cook on medium heat for 20 minutes, making sure to turn the burgers over, to cook them evenly.

Serve with mashed potatoes and vegetables or your favorite sides. Enjoy! Makes 4 - 6 burgers.







Slow-cooked Kale and Cabbage

I put this in the crock pot a few minutes ago. Kale and cabbage are two of my favorite greens. Mm mm, can't wait for dinner. :)




Ingredients

  • 2 lbs of fresh or frozen Kale (collard greens or turnip will work as well)
  • 1 small head of cabbage, washed and sliced
  • 1 smoked turkey wing or 1 ham hock 
  • 1/2 stick of butter
  • 1 whole sliced onion
  • 5 chicken bouillon cubes
  • 1 Tbsp of vinegar (optional)
  • 1/2 tsp black pepper
  • salt to taste


Fill a 6-quart or larger crock pot, half with water. Add all ingredients. Cook on high for 6 hours or on low for 8 hours. If you prefer a crisper Enjoy them with your favorite bread or other sides. (I usually enjoy this with a piece of cornbread.)

Apple Fruit Smoothie

My snack of choice for today. With three servings of fruit, I'm off to a good start today. Apples dominate the flavors in this smoothie.



Ingredients

  • 3 cups of peeled chopped apples, frozen
  • 2 cups of frozen red seedless grapes
  • 3 bananas
  • 1/2 cup of almond milk


Directions 

Add all ingredients in a blender and mix until all ingredients are well combined. Enjoy!

Pasta Salad

Lunch today, pasta salad. Simple and delicious!

















Ingredients

  • 4 cups of cooked Rotini pasta
  • 1 cup of light balsamic vinaigrette dressing
  • 1/2 cup of cubed cheddar cheese
  • 1/2 cup of cubed mozzarella cheese
  • 1/2 cup of chopped yellow bell pepper
  • 1/2 cup of chopped red bell pepper
  • 1/2 cup of chopped celery
  • 1 tsp Italian seasoning
  • 1/4 tsp of black pepper
  • 1/4 tsp of Emeril's Original Essence


Directions
Add all ingredients in a bowl and stir until well blended. Chill in the refrigerator for 1 hour. Enjoy!
Makes 4-6 servings.

Peanut Butter Chocolate Cheesecake Bars

Dessert this evening. This is definitely an indulgence! 

















Ingredients

Crust


  • 3 cups of crushed vanilla wafer cookies
  • 1 1/2 cups of crushed almonds
  • 1/2 stick of butter, melted


Filling


  • 1/4 cup of cocoa
  • 1 cup of peanut butter
  • 2 cups of powdered sugar
  • 2 (8) oz packs of cream cheese
  • 1/2 cup of milk (I used almond milk)

Topping

  • 1 (8) container of whipped topping
  • 1/2 cup of the remainder cookie and almond mixture 


Directions


Preheat oven to 350° degrees.

Lightly grease an 13"x 9" baking pan and set aside. Combine the crushed vanilla wafer cookies, crushed almonds, and the melted butter until thoroughly mixed. Set aside 1/2 cup of the mixture for the topping. Add the mixture to the prepared baking pan and use your had to pat the mixture to flatten it. Make sure that the mixture covers the entire pan. Cook the crust for 10 minutes. The crust should be a golden brown. Remove the pan from the oven and set it aside for the crust to cool. 


While the crust is cooling, use a hand mixer to mix together the cocoa, peanut butter, powdered sugar, cream cheese, and milk until the mixture is creamy. 


When the crust is cool, spread the creamy mixture evenly onto the crust. Spread the whipped topping on top of the creamy filling and sprinkle the remaining cookie and almond mixture on top of the whipped topping. chill for 3 - 4 hours. Enjoy. 


Yields 8 - 10 servings
