Orange Muffins

The first time I tried oranges muffins, I was in love! These are amazing! There's nothing low-cal about them, but a little bit won't hurt. :)



The orange flavor in these muffins is not overwhelming. It's in fact just enough to get the flavor. To add more of an orange flavor to this muffin orange extract can be substituted for the vanilla and lemon.

Ingredients

  • 12 baking cups/liners
  • 2 cups of all purpose flour
  • 2 tsp of baking powder
  • 1 cup of granulated sugar
  • 1 stick of butter, softened
  • 1 egg
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of lemon extract
  • 1 (14) oz can of unsweetened mandarin oranges, thoroughly blended in a blender or food processor
  • 1 Tbsp of orange zest


Directions

Preheat oven to 350° degrees.
Add baking cups to a 12-count muffin pan and set aside.



In a small bowl, sift together the flour and baking powder and then set aside.

In a large bowl, add the butter and sugar and mix with a hand blender until smooth and creamy.

Add the eggs, vanilla extract, and lemon extract to the mixture. Mix until well blended. 

Stir in the blended manderin oranges and the orange zest and mix until well blended. Add the flour mixture and stir until all ingredients are combined. 

Add the muffin mixture to the baking cups and fill the batter to the top of each cup as shown. 




Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.

Cool and serve! Enjoy!

Cranberry Berry Smoothie

This is now my favorite smoothie! It's made with a little bit of cranberry juice and a mixture of three berries! Soooo delicious!



Ingredients
  • 1 cup of cranberry juice
  • 2 cups of frozen mixed berries
  • 2 medium bananas, ripe

Directions
Add all ingredients in a blender and mix until all ingredients are well blended together. Enjoy as an afternoon or evening snack or as a dessert. 


Makes 4 (8) oz servings.

Turkey Vegetable Soup

Dinner this evening. So warm and delicious on such a blustery, cold night. ;)

Ingredients
  • 1/4 cup of all purpose flour
  • 1/4 cup of olive oil
  • 5 cups of water
  • 1 small sweet potato, peeled and chopped
  • 4 cups of cooked ground turkey, seasoned with 1 tsp of cumin
  • 4 chicken bouillon cubes
  • 1/4 tsp black pepper
  • 1/4 cup of chopped onions
  • 1/4 cup of chopped red bell pepper
  • 4 cups of kale and/or spinach (fresh or frozen) 

Directions


Heat a large pot on medium-high and add the olive oil. Let the oil get hot and then add the all-purpose flour. Stir to combine and let the sauce thicken. 


Add the 5 cups of water and heat the water until it begins to boil. Add the cooked ground turkey, chopped sweet potatoes, chicken bouillon cubes, and black pepper. Cook for 20 minutes. 

Add the kale, onions, and red bell pepper to the pot and cook for 10 more minutes, or until the sweet potatoes have softened. Remove the pot from the heat. 

Serve the soup with your favorite salad or crackers. Enjoy!


Makes 6 servings.
