Applesauce Cake

What I love most about this cake is that It's made using applesauce! The combination of applesauce, nuts, and raisins make this a definite treat. I topped it with a little cream cheese frosting for added flavor.









Ingredients

  • 2 cups of all-purpose flour
  • 1/2 Tbsp or 1 1/2 tsp of baking powder
  • 1/8 teaspoon of salt
  • 1 stick of butter, softened
  • 1 cup of firmly packed brown sugar
  • 1 egg
  • teaspoon of vanilla extract 
  • 1/4 teaspoon of cinnamon
  • 1/3 cup of apple cider
  • 1 cup of applesauce
  • 1 cup of crushed nuts (your choice)
  • 1/2 cup of raisins

Directions
Preheat oven to 350° degrees.

Grease and lightly flour an 8" x 8" square baking pan and set aside. (I lined my pan with aluminum foil for easy removal after baking.)

In a small bowl, sift together the flour, baking powder, and salt, then set aside.


In a large bowl, add the butter and packed brown sugar and mix with a hand blender until smooth and creamy.


Add the eggs, vanilla extract, and cinnamon to the mixture and mix until well blended. Stir in the apple cider and then add the applesauce. Combine all ingredients together. Stir in the crushed nuts and raisins.



Add the flour mixture and stir until the mixture is well blended and smooth. Transfer the mixture to the prepared baking pan and cook for 40 minutes or until a toothpick inserted into the center comes out clean. 



Remove from the oven and let the cake cool for approximately 30 minutes or until cool enough to add the frosting.
