Candy Corn Cake

I so totally love candy corn! This is just another way to enjoy it.


Candy Corn Cake Dessert Rolisweets


Ingredients

Cookie Layer
1 stick of butter, softened
1/2 cup of powdered sugar
1/2 tsp of vanilla
1 cup of all purpose flour

Yellow food coloring (20 drops)

Cake Layer
1 cup of all purpose flour
1/2 tsp of baking powder
a pinch of salt
1 cup of powdered sugar
1 stick of butter, softened
1 egg
1/4 tsp of vanilla extract
1/4 tsp of lemon extract
1/2 cup of milk
1 package of orange flavor dessert gelatin


Frosting
1 cup of white morsels (baking chips)


Directions
Preheat oven to 350° degrees.

Lightly grease an 8"x 8" pan and set aside. 


For the cookie:


Combine the butter and powdered sugar. Mix until the mixture is a creamy consistency.



Add the vanilla and stir just until blended and then add the flour and use a hand blender to mix the flour until well blended into a soft dough. Add the food coloring and mix just until the food coloring is blended thoroughly.




Add the dough to the prepared pan. Pat the dough onto the pan so that it covers the entire bottom of the pan. Set aside.




For the cake:

In a small bowl, sift together the flour, baking powder, and salt, then set aside.

In a large bowl, add the butter and powdered sugar and mix with a hand blender until smooth and creamy. 



Add the eggs, vanilla extract, and lemon extract to the mixture and mix until well blended. 



Stir in the milk.




Add the gelatin and mix well. Note: I added the whole pack, however, if you desire a less sweetened cupcake add only half of the pack. Next, add the flour mixture and beat until well blended and smooth.




Add the cake mixture to the pan by pouring it onto the cookie dough.



Cook for 35 - 40 minutes or until a toothpick inserted into the center comes out clean.



When the cake is done and has cooled slightly, melt the white morsels in a microwave safe bowl for 30 seconds. If they are not completely melted, microwave for 30 more seconds being careful not to overcook them. Stir the melted white morsels to a creamy consistency and spread over the top of the cake.
